A poor dish becomes a tradition: sarde in saor

The sarde in saor (Sardines with Onions) is a representative dish of the people from Venice and Veneto and it is a ritual of the Festa del Redentore, which is held in Venice on the third Saturday of July.

The sarde in soar are the perfect example of a poor dish that has become representative of the culinary culture of a region. The dish was created in 1300 because of the sailors’ need to conserve the fish during their long sea crossings. In an age where there wasn’t any instrument able to refrigerate the fish, the sailors used to cook the sardines and to mix it with a mixture of onions and vinegar in order to maintain them edible.

The recipe has few and simple ingredients, so the taste of the dish depends only on their quality. Today to prepare the soar, which means “taste” in the local dialect, it is preferred to use the white onions from Chioggia.
